Crisp, dry Chardonnay with serious seafood energy. Domaine De Vauroux comes from Chablis in northern Burgundy, France, where Chardonnay turns leaner, brighter and more mineral than the big buttery versions people either love or run from.
This is the kind of French white wine that makes you understand why Chablis has a fan club. It’s all about citrus, green apple and that clean, stony snap that feels like licking a cold seashell, in a good way. If Sauvignon Blanc is your usual crisp white, this is the elegant next shelf over.
- Appearance: Pale straw yellow, clear and bright in the glass.
- Nose: Lemon peel and green apple up front, with white flowers, wet stone and a tiny saline edge underneath.
- Palate: Dry, crisp and focused, with zesty citrus, crunchy orchard fruit and a chalky mineral feel that keeps it refreshing.
- Body: Light to medium-bodied, clean and precise rather than rich or heavy.
- Finish: Fresh and mouth-watering, with lingering lemon, mineral notes and a little sea-spray snap.
- Food pairings: Oysters, grilled prawns, lemon roast chicken, goat cheese salad or creamy mushroom pasta.
Pour it when dinner needs a white wine that actually wakes the food up. It’s especially good with shellfish, salty snacks, herby chicken, or a low-effort weeknight pasta that suddenly feels like you planned ahead.
Chablis is also a great “Chardonnay reset” bottle. If you’ve only had round, oaky Chardonnay before, this shows the grape’s sharper side, more citrus and stone than vanilla and toast.
Keep it nicely chilled, but don’t freeze the life out of it. A few minutes in the glass lets the lemon, apple and mineral notes stretch out a bit.
Fun Fact: Chablis sits closer to Champagne than to much of Burgundy, and its famous Kimmeridgian limestone soils are packed with ancient marine fossils, which helps explain that salty, oyster-shell character people obsess over.
