Sharp, clean, and properly refreshing, this is dry Chardonnay from Chablis in northern Burgundy, France. Forget big buttery Chardonnay. Chablis is the leaner, brighter cousin, all citrus, green apple, and that cool mineral bite that makes you immediately think of oysters and a second glass.

J. Moreau & Fils Gloire de Chablis is a great entry point if you want to understand why wine people get weirdly excited about this region. The magic is simple: Chardonnay grown in a chilly place, on ancient limestone soils packed with fossilised shells. Translation? More zip, more focus, less heaviness.

  • Appearance: Pale straw with a clear, bright look.
  • Nose: Lemon zest, green apple, white flowers, and a clean chalky note that feels very Chablis.
  • Palate: Dry and crisp, with citrus-led fruit, bright acidity, and a light mineral edge that keeps everything fresh.
  • Body: Light to medium-bodied, lively rather than weighty.
  • Finish: Clean and mouthwatering, with lemon peel and a stony, saline flicker at the end.
  • Food pairings: Oysters, grilled prawns, lemony roast chicken, goat cheese salad, or creamy pasta with mushrooms.
